Grading and specification
Yellowfin from Indonesian waters is graded on colour, fat line and firmness — read on a cut test in daylight, not from a document. Second-half-of-year landings hold colour longer because trips are shorter and the fish reaches ice faster, which is why A and A− colour is a realistic spec from August onward. Size grading follows buyer requirement, commonly 10 kg up, 20 kg up and 30 kg up, and we grade across the lot rather than down a single pallet.
Handling and cold chain
Handline-caught yellowfin is bled and iced on board, landed at the nearest port, then moved into cold store and pulled to −20°C to −35°C. The reefer is pre-cooled before the first carton is loaded and door-open time is kept short — the two windows where a good catch is most often lost. Loading is filmed end to end, so the buyer can verify the container was cold before it was filled.
Documentation for import clearance
Every shipment travels with a BKIPM health certificate, catch certificate, certificate of origin, packing list and laboratory test report where the destination requires one.
