A true bonito, not a substitute
Sarda orientalis is a genuine bonito and should not be quoted or documented as skipjack. Buyers in the smoking and dried-fish trades ask for it specifically because the flesh takes salt and smoke differently from Katsuwonus pelamis. Where a supplier offers "bonito" without a Latin name, that is worth a question before an order.
Forms and processing
Whole round is the standard export form. Dried and salted production is available for buyers supplying traditional-market channels, produced to an agreed salt and moisture target rather than to a generic house standard. Firm, unbruised fish is selected for both, since handling damage shows badly after smoking.
Cold chain and documents
Frozen and held at −20°C to −35°C, loaded into a pre-cooled reefer with the load documented on video. BKIPM health certificate, catch certificate, certificate of origin and HACCP factory pack travel with every container, with Sarda orientalis declared identically on each.
