Grades and end uses

Skipjack is the volume species of the Indonesian tuna fleet and the grade you need depends entirely on what the fish becomes. Canning lines buy on size consistency and histamine control; katsuobushi buyers want intact, well-bled fish in the 1.4 to 1.8 kg band; loin processors take the larger grades. We grade to whichever of those three the order is for rather than shipping a mixed lot.

Frozen at sea versus shore frozen

FAS-on-board skipjack is frozen within hours of capture and generally holds histamine well below limits, which matters for European and Japanese buyers. Shore-frozen fish is cheaper and appropriate for many canning programmes, but the vessel-to-ice interval must be documented. We tell buyers which of the two a given lot is, with the landing record to support it.

Compliance and testing

Shipments carry HACCP and BRC factory documentation, a BKIPM health certificate, catch certificate and certificate of origin. Histamine and heavy-metal laboratory reports are issued per lot where the destination requires them. Katsuwonus pelamis is declared as Katsuwonus pelamis throughout — the single most common cause of a held tuna container is a species mismatch between certificate and carton.
