We declare glaze percentage on the packing list and verify it by weight before and after glazing, because undeclared glaze is the most common source of yield complaints on cephalopods from Indonesia. Tumbling time is treated as part of the specification: over-tumbled octopus gives up moisture on the pan, under-tumbled octopus is rejected by the kitchen.
EU approval and documentation
Cephalopods for the European market must come from an approved establishment, and the approval number must appear on the health certificate exactly as issued. Every container carries the BKIPM health certificate, catch certificate, certificate of origin and factory HACCP documentation, with Octopus cyanea declared consistently throughout.
